Jean-Paul Brun likes to do things the old way. Since his start in 1979, he has chosen not to use commercial yeast, and he prefers to use traditional Burgundian fermentation rather than the  carbonic maceration more often employed in Beaujolais. In the intervening decades, Jean-Paul has expanded out from his base in Charnay, in the southern part of Beaujolais, into the cru villages. He now owns and manages vineyards in the Côte de Brouilly, Moulin-à-Vent, Fleurie, and, for this wine, Morgon. This cuvée derives from two plots in Morgon, one on the famous Côte du Py. After sorting and destemming, the grapes macerate for four weeks and age for ten months in concrete vats. The wine is lightly filtered and bottled with only a small addition of sulfur. This is lusciously dark gamay, with aromas of fresh sod and leather along with brambly raspberry and molasses. Nice lift on the palate leads to a long, savory finish. Sustainably grown, low-intervention/natural wine, vegan.
