Jérôme Bretaudeau insists on doing things his own way. In addition to the melon de Bourgogne that Muscadet is known for, he also grows grape varieties otherwise unheard of in the region. He keeps yields low in the vineyard, harvests by hand, and uses only indigenous yeasts. And his winery is a veritable laboratory of vinification techniques, using a range of fermentation vessels: stainless steel tanks, tuns, barrels, concrete eggs, and amphorae. Twenty years of experimentation has paid off, in the form of delicious, age-worthy wines of complexity and depth! This ‘Gabbro’ muscadet takes its name from the volcanic, granite-like rock indicative of the region. It ages for several months on the lees, stirred weekly. Beautifully textural on the palate, with layers of lemon curd and apple pie spice over briny minerality, this is a multi-level taste experience. Its concentrated fruit and sizzling acidity would drink excellently now or continue to meld and deepen over the next few years of aging. Biodynamically grown, certified organic, low-intervention/natural wine, vegan.
