Johannes Zillinger 'Revolution' Ancestral Pet Nat NV

Johannes Zillinger farms biodynamically in the Weinviertel region of northeastern Austria. Fermenting only with indigenous yeasts and bottling with only light filtration and minimal additions of sulfur, Johannes meticulously produces delicious, well-structured wines. His pétillant naturel combines grüner veltliner (80%) from the 2021 harvest with riesling (20%) from 2020. Clean and toasty, with abundant bubbles, this is an elegant pét-nat that reveals orchard fruit and stone fruit flavors before a subtle, saline finish.
