Nathalie Vignier represents the tenth generation of winegrowers of that name to make Champagne. Together with family friend Sebastian Nickel (also with deep winemaking roots in the area), Nathalie has combed through the vineyards inherited from her father to find the best single parcels to vinify separately. Nathalie and Sebatian’s approach involves small-production wines from particular vineyard parcels, aged for extraordinary lengths of time (up to 12 years in some cases). ‘Aux Origines’ (“where it all began”) is an homage to family history, made entirely from “Les Simarts”, the first vineyards planted in the 1960s in Barbonne-Fayel, Côteaux Sézannais, by Nathalie’s grandparents, Marie-Louise and Paul. 100% chardonnay, from 30-60 year old vines, this blanc de blancs is fermented in stainless steel tanks with full malolactic fermentation, aged a minimum of 36 months before disgorgement. Honeysuckle and wet stone on the nose yield to a bright, thirst quenching palate, with a fine mousse that carries apple, Comice pear, and toasty white bread flavors over a core of distinctive minerality.
