La Distesa’s cellar has been in the Dottori family for three generations. The family has focused on natural winemaking from the very beginning, avoiding the use of chemicals in the vineyards and cellar, and relying on biodiversity in the vineyards to nourish and protect the vines. Fermentation takes place with native yeasts, and minimal sulfur is added at bottling. The grapes for this cuvée come from two sites approximately 320 m above the sea, both planted mostly with verdicchio (along with other beneficial plants such as fava beans, peas, wild mint, and alfalfa.) It is fermented with native yeasts and aged in concrete vats. 20% of the wine also sees a few days of skin contact, lending a faint tannic touch to the finish. This is delightfully savory in character with nutty and briny elements mingling with stone fruit notes, and hints of mineral and tannin. Organically grown, low-intervention/natural wine, vegan.
