La Ferme du Vert, translating to the green farm, is run by third generation winemaker Jérome. He’s a young 32 years old but already has a decade of winemaking under his belt, firmly believing that a vineyard should be a complete farm with animals to get a better understanding of how flora and fauna interact to benefit each other. He follows the principles of biodynamics to intimately understand how the environment works to create the best wine under natural circumstances. His farm is located right on the border of the Gresigne forest, within the AOC of Gaillac, and the ‘Cado Tsoun’ is made of 100% duras which is a grape indigenous to the region. It’s grown in rich, red clay soils and fermented in stainless steel before being bottled unfined, unfiltered, and without any added sulfites. The wine is plush with really fresh dark fruit that is almost carbonic in feel, even though it’s not. Think of perhaps a muscular Beaujolais mixed with syrah, with a hint of pepper and violets.
