Laurent Herlin worked as an IT engineer for 12 years before deciding to become an organic winegrower. He bought 15 acres around Bourgueil which he farms biodynamically. In addition to its environmental benefits, Laurent passionately believes low-intervention winemaking is the best way to let the terroir of the region really “speak” through the wine. “Tsoin Tsoin” (“Boom Boom”) is a fresh take on cabernet franc, the iconic grape of Bourgueil. Made with whole cluster fruit from 35 year old cabernet franc vines (along with 20% gamay from 5 year old vines), it sees carbonic maceration for 15 days and is bottled quickly afterwards with no fining, light filtration, and minimal sulfur. A far cry from the deep, structured style of traditional cab francs of the region, “Tsoin Tsoin” is a vivacious summer sipper meant for chilling (both for the wine and the drinker!) Bright ruby in color, this is light bodied and dry with vibrant aromas and flavors of freshly-crushed raspberries and wild strawberries, violets, green bell pepper, and a hint of herbs and spices. Juicy acidity and a hint of tannin on a refreshing finish make this a great hot weather grab with grilled veggies or a poolside platter of goat cheese and charcuterie.
