Les Brebis (“breu-BEE”) means “the ewes” in French, and the Shaffer family (whose name serendipitously translates to “shepherd” in German!) considers their winemaking philosophy akin to that of gently “herding” their wines in the direction they desire, rather than artificially manipulating them. This small, family-owned winery specializes in pinot noir from the Eola-Amity Hills AVA of Oregon. They source fruit from select sustainably farmed vineyards in the region, and use native yeasts for fermentation. Wine is aged in older small French oak barrels and bottled unfined and unfiltered. This pinot is elegant and reflective of the area it hails from. On the palate it is delicate and light-bodied in texture, with ripe red cherry fruit, a touch of cracked black pepper, and a hint of cedar. Sustainably grown, low-intervention/natural wine, vegan.
