For Mireille and Pierre Mann, opening Mas des Caprices in 2005 meant completely shifting gears: from running a restaurant to tending a vineyard, and all the way across France from northeast to southwest. Though both descend from winemaking families in Alsace, so the career change meant a return to their “roots.” The plot of land they landed on lies right by the Mediterranean, at the foot of the Pyrenees, near the border with Spain. The couple immediately began the conversion to organic farming, eventually pursuing biodynamic certification as well. Their vineyards focus on the varieties the southwest is known for: carignan, mourvèdre, macabeu, and grenache of various colors (noir, gris, and blanc). This Corbières white is a blend of grenache blanc and macabeu, aged in egg-shaped vessels (hence the name, “egg-white”). A hint of apricot aroma floats over a beautiful panna cotta texture, shored up by a finish reminiscent of hazelnut skin. Certified biodynamic, low-intervention/natural wine, vegan.
