For lessons in sustainable viticulture, and for exceptionally well-crafted wines from distinctive vineyards, those across Northern California look to Steve Matthiasson. For two decades, Steve and his wife, Jill Klein Matthiasson, have carefully produced wines that reflect their expertise and labor, from planting to bottling. This Napa Valley cabernet draws from six vineyards representing three AVAs: Coombsville, Rutherford, and Oak Knoll. Mixed in are small amounts of merlot, cabernet franc, malbec and petit verdot. Long, slow, cool fermentation preceded 20 months of aging in barrels (of which less than 20 percent were new). Bright and fresh for a Napa cab, this cuvée shows bountiful red fruit and just-right tannins on a minerally bed of graphite. Organically grown, low-intervention/natural wine.
