The story of this local cider producer dates back to 1910 when William Soons moved to the Hudson Valley to try farming, in fact dairy farming at first. Having been raised in England, the interest in apple growing ran deep and shortly thereafter Orchard Hill Farm was born. Eventually the name was changed to Soons Orchards, but with the release of ciders, the family chose to brand them with the old name. With over 50 varieties to choose from, Orchard Hill is able to blend a cider with great character. The Gold Label uses only specially selected estate fruit and is their most premium cider, being made and bottle-conditioned in the champagne method, producing a complex, beautifully balanced, expressive cider. It is aged on the lees for a year before disgorgement, giving it a toasty aroma balanced by bright acidity and pure fruit expression. Try to remove this one from the fridge 30 minutes prior to enjoying to allow the complex, delicate flavors and aromas to reveal themselves.
