Made by seventh generation winemaker Attila Pálffy, the PANK (Pálffy Attila Nemes Köveskál) pét-nats were the first pét-nats approved for sale by the Hungarian government in 2018. Pálffy is located in the traditional winemaking village of Köveskál, which sits in the Káli basin north of Lake Balaton in western Hungary. PANK started as an homage to his days as a bassist with a Hungarian punk band, a side project designed to experiment with different styles of low-intervention winemaking. The Pink PANK Pét-Nat (try saying THAT three times fast!) is 60% syrah and 40% pinot noir, hand harvested from vineyards in the Mező-mál dűlő in Köveskál, an area that has seen wine production since the Middle Ages. (“Mező” refers to a warm piece of land in an ancient Hungarian dialect.) Grapes were whole cluster pressed and fermented spontaneously with native yeasts. Initial fermentation was on the skins, then continued in the bottle for a month after the skins were removed. It was bottled unfined and unfiltered with minimal sulfur added only at bottling. The wines remained in bottle after fermentation for five months before release. Feisty and refreshing, PANK offers up exuberant flavors of violet, strawberry, and cranberry, with a clean, dry, yeasty finish. Organically grown, low intervention/natural wine, vegan.
