The origins of Parés Baltà date back to 1790 when the first vines were planted in the mountains of Penedès, Spain (just west of Barcelona), on the estate that now surrounds the winery. In 1978, Joan Cusiné Hill took over the winery, beginning a family business that’s now in its third generation. Today his two grandsons, Joan and Josep Cusiné Carol, grow the grapes, while their wives, Maria Elena Jimenez and Marta Casas, are the winemakers and oenologists. Remaining respectful of long standing winemaking traditions, Parés Baltà welcomes innovation as well, with respect for the environment above all. Accordingly, all their vineyards are certified organic and biodynamic. Cultivating their grapes without any herbicides, pesticides, or chemical fertilizers, they employ a flock of sheep to fertilize and weed the vineyards after harvest, as well as hives of bees to assist in pollination. ‘Satel-lit’ is 100% carignan blanc, a fairly rare varietal that is native to Empordà. It is farmed with organic and biodynamic techniques, and fermented in temperature-controlled stainless steel for 19 days before being split into three parts for separate aging. One part sees 6 months of aging in 500L barrel, another is aged for 8 months in 54L demijohns, while the third part rests on its lees inside a stainless steel tank. All of this comes together into a wine of incredible texture and complexity. Briny seabreezes meet crystallized honeycomb on the nose, while the palate is weighty and viscous, offering notes of apricot skin and a hint of smokiness. The finish is long, salty, and savory, just begging to be paired with seafood. Certified organic, low-intervention/natural wine, vegan.
