Pascal Doquet began making wine with his parents in 1982, taking over the family estate, Doquet-Jeanmaire, in 1995 when his father retired. Now under his own name, the domaine boasts holdings in some of the greatest terroir in the Côte des Blancs, and has been certified organic since 2010. Pascal is respected as one of the premier vignerons in Champagne, and farms just under 9 hectares of vines with parcels in Vertus, Le Mont Aimé, and Le Mesnil-sur-Oger, including the acclaimed old vine plot in the “Champ d’Aoulettes”. Natural farming is his true passion, and he is fanatically focused on vineyard management, using plant-based treatments to minimize his use of copper and sulfur, employing extensive cover crops, and working his land with an ultra-light tractor to minimize soil compaction. As a result, his wines are incredibly honest expressions of terroir; mineral-laden and complex. ‘Arpège’ is 100% chardonnay, hand harvested from Vertus, Villeneuve, and Mont Aimé, pressed pneumatically, and fermented with indigenous yeast in enamel-lined tanks. It sees a minimum of five months on the lees, receives minimum bâtonage, and undergoes malolactic fermentation. All cuvées are aged at least three years before disgorgement. ‘Arpège’ is the estate’s flagship non-vintage wine, and contains a notable amount of reserve wine (around 50%), which is preserved in enamel tanks to maintain freshness. It exudes intense purity and focus, with aromas of pear, spice, and tea leaf, flinty minerality with a whiff of smokiness, and elegant depth and complexity overall.
