Domaine Pattes Loup is a relatively young estate, being started by rising star winemaker Thomas Pico in 2005 just outside the village of Chablis. He has slowly been inheriting selection massale vines from his father, converting all of them to organic and employing more strict yield control against the wishes of his father. He has also chosen to produce all of his wines naturally, only fermenting with indigenous yeasts and bottling without fining or filtration. The racy, briny minerality of his wines exemplifies the essence of Chablis, and each of his releases shows a particular vitality and textured density. This mise tardive (late bottling) of Pattes Loup’s ‘Vent d’Ange’ (‘angel wind’) benefits from an extra year of lees contact, having fermented and aged in a combination of concrete egg and stainless steel. Very bright and vibrant, it has wonderful precision and focus with mineral-driven intensity, energy, and tension. Certified organic, low-intervention/natural wine, vegan.
