‘Pied à Terre’ (“foot to earth”) embraces the philosophy that “the farmer’s footprint is the best fertilizer” ie. that attention to detail and meticulous care in the vineyard provide the most important foundation for making great wines. The 2015 cabernet was sourced from a small selection of notable Sonoma vineyards: Aunt Cathy’s, Nimble, and the Grable vineyards, all farmed by Pied à Terre. The 2015 harvest was naturally concentrated, the result of the ongoing drought in the area, and yielded powerful, intense wines. Fermentation occurred with naturally occurring yeasts and lasted a duration of 22 days, before the wine was aged in French oak, less than 20% of which was new wood. Classic, concentrated flavors of blackberry, plum, and currant mingle with notes of licorice, graphite, and herbal green pepper. Robust yet refined, this provides luscious ripe fruit deftly balanced with fresh acidity and firm tannins. A richly textured finish lingers on the palate, inviting sip after sip that pairs especially well with hearty fare.
