Nicolas Palazzi founded PM Spirits out of a passion for cognac. He began by sourcing, aging, and blending unique casks in order to bring specialty cognac to the New York market. In the years since, PM Spirits has expanded its portfolio to include a variety of other spirits from both sides of the Atlantic. Sherry constitutes a recent project for the company: Nicolas teamed up with Eduardo Ojeda, winemaker at Valdespino and La Guita and co-owner of well-known sherry company Equipo Navazos, to find and bottle a line of truly fantastic sherries. As opposed to styles such as fino and amontillado, oloroso sherry is not aged under the layer of yeast known as flor. Instead, it gets fortified to a higher level (in this case, 17%) to prevent the formation of the flor layer and ages exposed to air in casks. These specially chosen casks aged for an average of 18 years. Rich and complex, the resulting sherry combines the signature nuttiness of oloroso with savory umami notes. Sautéed mushroom and supple leather meld with golden raisin on the palate, with hazelnut and pecan on the finish. Sustainably grown, vegan.
