Fausto and Cinzia Cellario are 3rd generation winemakers in the village of Carru on the western outskirts of the Langhe. They only work with indigenous Piedmontese grape varietals, and passionately adhere to local winemaking traditions both in the vineyard and cellar. The Cellario vineyards cover approximately 30 hectares between 5 different vineyard sites throughout the southern Langhe. Vineyard work is certified organic and all fermentations take place with native yeasts. Sulfur is only added in very small quantities at bottling if necessary. ‘Il Baffone’ (“big mustache”) is a blend of the obscure nascetta grape and moscato giallo fermented to dryness. Primary fermentation occurred in stainless steel with five days of skin contact. Late harvest wine from dried grapes (passito) was then added at bottling to start the secondary fermentation, resulting in a unique, vivacious sparkler! No sulfur was added and there was no disgorgement. Racy acidity and lively bubbles make for a refreshing, palate-cleansing sipper, with hints of tangerine zest, grapefruit pith, and apricot kernel on a bone dry, mineral finish.
