Poppy, located in the beautiful Salinas Valley within Monterey County, CA, was founded by the Silva family, who have carefully tended that land for over 45 years. They chose the name Poppy because it is the state flower of California and was growing amongst their vines, and it speaks to their love for their state. With a multitude of resources at their disposal, including a state-of-the-art facility, they have managed to create a compelling pinot noir with old winemaking traditions meshed with new techniques. Fruit from three regions, Arroyo Seco, Santa Lucia Highlands and Monterey, is cold soaked prior to fermentation to extract flavor, then fermented, partially in French oak barrels. The other portion is fermented in stainless steel, then mid-season is rotated with the barrel-fermented portion. The result is a pinot noir with exuberant red fruit with a hint of mocha and toast, super drinkable for any occasion.
