Since joining with his father in 1998, Fabrice Pouillon has steered the family domaine toward farming and winemaking practices that prioritize sustainability and the health of the vineyards. Biodynamic principles guide his use of compost, organic fertilizers, and cover crops. This rosé champagne comes from the estate’s home vineyards in the premier cru village of Mareuil-sur-Aÿ. As opposed to the way many rosé champagnes get their color—by mixing in a small amount of finished red wine—Fabrice makes his rosé from 100% pinot noir grapes that macerate on the skins for twelve hours before pressing and fermentation with indigenous yeasts in enamel. 20% of the harvest ages in neutral barrel while the rest is mixed with the previous vintage, which has already aged 12 months at that point. The final mix for this release is 80% from 2019, 20% reserve wine. This batch of bottles was disgorged in spring 2022. Subtle and elegant, with a density of roasted strawberry flavor and a touch of spice, this is a champagne that would pair magnificently with lobster, fried oysters, or just a beautiful evening.
