Olivier and Francine Savary have been vignerons since 1984 in the village of Maligny, just north of Chablis. Olivier attended wine school in Dijon, and he and Francine got started by farming vineyard land in a sharecropping-esque arrangement. Eventually they began bottling wine under their own label and quickly earned a well deserved reputation in the appellation. Today they are assisted by their sons, Maxime and Mathieu, who are continuing in the family tradition. The limestone-rich Kimmeridgian soils of Chablis play an essential role in the creation of stunningly complex chardonnay. Fourchaume is one of the best known Premier Cru vineyards in Chablis, located just to the north of the town of Chablis on the eastern banks of the Serein river, and noted for rounded lemony flavors and a fresh minerality that distinguish it from other Chablis Premier Crus. This dazzling bottle is classic Chablis, with iconic aromas of crushed seashells and a defined, shimmering mineral structure. Fruit is harvested from 30 year old vines, and is vinified in a traditional method, undergoing malolactic fermentation and aging in tank. Elegant and complex, it opens with aromas of crushed shells, fresh orchard fruits, delicate lemon peel, and hints of quince jam. The terroir really shines through on the palate, with superb minerality and faint whiffs of white flowers and tobacco. A perfect balance of tension and richness, the finish goes on seemingly forever, all adding up to a wonderfully sophisticated bottle.
