Francesco Serafini and Antonello Vidotto have been making outstanding wine in the Veneto since 1986, utilizing cultivation and vinification techniques of prestigious French winemakers to take full advantage of their land’s potential. Antonello Vidotto spends his days tending the vineyards, which are planted to high density with low yields. Francesco Serafini is the winemaker, a dynamic and gregarious master taster whose passion for wine approaches full-on obsession. Amarone is made from partially dried grapes that go through a process called “appassimento” which concentrates flavors and aromas, lending Amarone its characteristic richness. A blend of corvina, corvinone, and rondinella from the Amarone della Valpolicella DOCG Classico in the Negrar Commune, the grapes are harvested and sorted by hand, destemmed, and fermented in stainless steel. The wine is aged in barrel for 18 months, and in bottle for another year. Ruby red in the glass, it unfurls layer after layer of luscious candied black cherry, blackberry, red plum, rose petal, chocolate, vanilla bean, and baking spice on the nose. Sumptuous and rich on the palate, it offers up loads of velvety dark fruit, sweet spices, and warm, savory crushed herbs. A luxuriously long finish with hints of licorice and spice provides the perfect closer to this powerful, elegant bottle. Organically grown.
