Winemaker Bernard Stadlmann impressively holds 3 doctoral degrees but ultimately decided to focus his career on continuing the family craft of winemaking in the town of Gumpoldskirchen, in the esteemed Thermenregion located just south of Vienna, Austria. Rotgipfler, a rare grape with only 120 hectares left in the world, is notoriously finicky, but Stadlmann has eight generations of expertise to draw upon to maximize all that these special grapes have to offer. Winemaking and aging practices lead with the goal of maintaining a sense of place with minimal intervention from Bernard. The grapes are hand harvested in October and whole-cluster pressed. Fermentation with indigenous yeast occurs in neutral Viennese oak casks, spending 10-12 months aging on its lees to add textural richness and complexity. Stony minerality with a hint of lemon curd, bright herbs, and yellow apple can be found on the nose. The lively acidity maintains the structure of the wine while nicely balancing out the textural richness. Certified organic, biodynamically grown, low-intervention, natural wine.
