This is Suntory's flagship bottling, and one that has become increasingly rare over the past 5-7 years (we used to be able get this by the case!). The Yamazaki Distillery is Japan's oldest malt distillery, founded in 1923, and is located in the northern Part of Osaka Prefecture. The 12 Year single malt produced there is an incredible expression of place and time. Yamazaki is uniquely located at the confluence of several rivers and streams, which creates a relative humidity that is perfect for aging barrels in their warehouses. The water sourced for production is also prized for its low mineral content, which is a major influence in the flavor profile of their spirits. The spirit for the 12 Year comes from a dozen different pots stills of various shapes and sizes, so it gives blenders a variety of flavor profiles for blending. Aging is done in a mix of ex-Bourbon casks, American oak, with a a small portion aged in ex-Oloroso casks and Mizunara oak. On the nose, we find ripe peach, pineapple, baking spices, candied orange peel, a hint of vanilla, and Mizunara oak. The dram finishes long with cinnamon spice, buttercream, and candied ginger.
