Priorat is justifiably famous for its powerful red wines, but Dominik Huber, a native German with a background in business administration, and Eben Sadie, a highly regarded enologist from South Africa, founded Terroir al Limit in part to prove that Priorat wine is more than a one-trick pony. The goal at Terroir al Limit is to yield wines of infusion as opposed to extraction, taking a Burgundian-inspired approach to terroir to produce wines of sophistication and elegance. Their farms are certified organic and they use some biodynamic practices, as well as hand harvesting and fermenting with wild yeast. ‘Roc d’Aubaga’ is a co-fermentation of grenache noir, grenache gris, and grenache blanc (which makes it a clarete, or blend of red and white grapes). This dark rosé is a serious bottle ideal for pairing with food. A “rosé for orange wine lovers”, this leans in a savory, structured direction, with nutty overtones dancing around flavors of papaya, dehydrated citrus rind, pink peppercorn, fennel, and tea leaf, accompanied by a defined tannic grip on the lengthy finish.
