Country: FRANCE / Region: AUVERGNE / Appellation: N/A / Varietal(s): N/A --- Originally from cider county in Normandy, Vincent Marie studied marketing then took a job in Alsace where he fatefully stumbled upon natural wine. After quitting his day job, Vincent spent three years working under Bruno Schueller and Patrick Meyer, two of the most forward-thinking natural wine producers in France, before landing in Auvergne with a tiny 1.5 hectares of vines (now up to 5ha). While he grows chardonnay, gamay and syrah, we were told that Vincent always wanted to make a cider, harking back to his roots in Normandy. His “HeavenCider” is made at his winery in Auvergne from cider apples purchased from Normandy. Seemingly inspired by keeved ciders of Northern France, this has the perfect balance of sweet and funk (proverbial “barn candy” or “sweet horse” if you will). Those familiar with the ciders of Manoir du Kinkiz or Domaine Lesuffleur will certainly find similarities - full-bodied, amber, impeccably melding barnyard, sweetness, and tannin. This pairs nicely with heavily spiced dishes, such as Harrisa-roasted carrots with spiced labneh, or hearty fare like smoky split pea and ham soup, or a classic cheese plate featuring sharp Vermont cheddar! Clotilde Davenne Sauvignon Blanc Saint-Bris AOP 2017 - ORGANICALLY GROWN
Country: FRANCE / Region: BURGUNDY / Appellation: SAINT-BRIS AOP / Varietal(s): SAUVIGNON BLANC --- Although sharing the same Kimmeridgian soils as Chablis in Burgundy, the sauvignon blanc-based wines of Saint-Bris-le-Vineux take their stylistic cues from Sancerre, just one and a half hours to the West. It is the only town in Burgundy with sauvignon blanc. Clotilde Davenne grew up in Burgundy’s countryside and planted her first vines in 1989, and has since grown her domaine to over 18-hectares of small plots in three different appellations (Chablis, Irancy and Saint-Bris). Her sauvignon blanc grapes are from limestone soils; they are fermented in stainless steel with no malolactic fermentation, which preserves a lovely green apple tartness. The wine is racked and bottled after spending four months on the lees for textural depth.  Her Saint-Bris showcases the great qualities of this aromatic white grape: zesty citrus fruit with a mineral-driven, seashell core. A nose filled with lemon curd and tart green apple provides the opening salvo, giving way to a palate full of juicy white fruits, more invigorating citrus, and chiseled minerality with a crisp but significant mouthfeel that still remains bright and lively. A lovely match with grilled swordfish with lemon, oregano, and summer squash. Organically grown.

Domaine des Terres Vivantes Beaujolais-Villages AOP "La Lutine" 2018 - CERTIFIED ORGANIC
Country: FRANCE / Region: BURGUNDY / Appellation: BEAUJOLAIS-VILLAGES AOP / Varietal(s): GAMAY --- Domaine des Terres Vivantes, located in the village of Blacé about 10 miles south of Morgon in Beaujolais, had always been a polycultural farm belonging to winemaker Ludovic Gros’s grandmother. However, before Ludovic and Marie Gros started growing grapes there, the land had to be revived. Having been fallow for about 10 years, the land that would become Domaine des Terre Vivants (which translates to “living earth”) needed real attention and care. The pair spent roughly five years reviving the soil, laying the groundwork for their now certified organic vineyard. (The Gros also grow their own wheat to mill into flour for Marie’s breadmaking.) Their rosé is 100% gamay from 45-year-old vines planted on granite and sandy loam soils. The grapes see whole cluster direct press with no maceration, and the must is transferred to stainless steel tanks for fermentation. The wine rests on the lees in tank during the winter. Bottling the following spring occurs according to the biodynamic calendar. You can feel this is a rosé from living soils. A vivacious nose of grilled tangerine, fresh floral tones, and a touch of just-ripe strawberry are situated on a dry palate of balanced acidity and creaminess. Enjoy the last of the season's heirloom tomatoes and pair this with a BLT with basil aioli. Certified organic, vegan.

Christian Venier "Les Hauts de Madon" Cheverny AOC 2018 - ORGANICALLY GROWN + LOW INTERVENTION
Country: FRANCE / Region: LOIRE VALLEY / Appellation: CHEVERNY AOC / Varietal(s): PINOT NOIR+GAMAY --- Christian Venier is located in the eastern Touraine, in Cheverny where he refined his natural winemaking skills working with his cousin Thierry & Jean-Marie Puzelat of Clos du Tue Boeuf. After spending seasons assisting with harvests, he produced his first vintage in the mid 90s. He kept to his philosophy of making wine naturally, remaining a farmer akin to his ancestors, organically farming his approximately 6 hectares of vineyards. This wine is 80% pinot noir and 20% gamay, hand-harvested from Christian’s higher vineyard called ‘Les Hauts de Madon’, fermented whole-cluster using natural yeast in a cement and resin tank; the grapes undergo carbonic maceration, and are bottled unfiltered with no sulfur added. It is light and fruitful but complex with minerality and life. Great with seared albacore or poulet en cocotte (chicken roasted with bacon and potatoes). Organically grown, low-intervention, vegan.
