The house of Vilmart has created classic Champagnes in the village of Rilly-la-Montagne, on the north side of the Montagne de Reims, since 1890. Laurent Champs carries on the family tradition alongside his daughter Morgane. They take pride in their sustainable farming practices and in hand-harvesting and transporting their grapes whole from the vineyard to the pressing shed. Vilmart is distinctive among Champagne producers in that their wines age in oak and they forego malolactic fermentation. Aging takes place over ten months en foudre, followed by three to four years aging en tirage in the bottle. This rosé joins 90% pinot noir (of which 15% is red wine) with 10% chardonnay, all from premier cru vineyards in Rilly-la-Montagne. This release draws primarily from the 2016 harvest. The dosage was 9 g/L; this batch was disgorged in June 2019. A rich orange-pink in the glass, this rosé opens with elegant, subtle aromas of crushed stone and tart cherry. Given a few moments to breath, floral notes emerge, and strawberries mingle with grapefruit zest, melon, and firm peach on the tongue, with a swirl of cream.
