Clai Winery is a family estate located in Krasica, Istria, just 40 km across the Croatian border from Trieste. It comprises three hectares of vines, as well as three hectares of olive trees, the winemaking is firmly focused on native Croatian varietal - malvasia, refosk, and muscat, occasionally blended with international varietals. Winemaker Giorgio Clai adheres to traditional principles, farming organically without any systematic treatments (herbicides, insecticides, commercial fertilizers), and only using organic manure when fertilizer is called for. Yields are kept low, and grapes are spontaneously fermented on the skins with native yeasts, before aging on the lees in large wooden casks. After two years of barrel aging the wine is bottled without micro or sterile filtering. 100% refosk, this is a medium to full bodied treat, loaded with dense, chewy berries and currants. A spicy, meaty palate is complex without being overwhelming, with mingled hints of earth, baking spices, and licorice before finishing with a touch of brightness and well-integrated tannins.
