Considering how well established Wild Arc Farm is today, and how sophisticated their output, it is hard to believe they started just a few years ago. Todd Cavallo and Crystal Cornish came north to the Hudson Valley from Brooklyn in 2016 and have since gained a reputation for their commitment to biodynamics and permaculture, as well as for their outstanding wines, ciders, and vegetables. For this concoction, Todd macerated callery pears from Wild Arc’s own trees in cider made from sustainably-farmed northern spy apples before aging the resulting pear-apple mix in neutral French oak puncheons for six months. Bright, fruity, and spicy, this can may surprise you with its depth and complexity.
