Create an accountThe cirial variety of agave grows only in arid parts of Oaxaca known for a lack of rainfall. This rather obscure agave takes 10-12 years to mature. Akul takes pride in owning every part of the process of making mezcal: planting and replanting agave on their own lands at Valle de Oaxaca to ensure sustainability, which requires a wait of 8-20 years before harvest depending on the type of agave. Maestro Mezcalero Eric Hernández has patented a unique furnace design that reduces cooking time and oak and mesquite use, thus making the process more environmentally friendly while simultaneously balancing mezcal’s famed smoky character with more subtle notes. This bottle is a perfect example: herbal aromas mingled with spicy citrus notes yield to hints of pineapple, orange, and coriander on the palate that finishes in a balanced, modestly smoky manner.
