The 8 hectares of vines belonging to Bodega Clandestina lie in the village of Sant Martí Sarroca, due west of Barcelona in the Penedès region of northwest Spain. When he began the project in 2018, Ferran Lacruz decided not to adhere to the regulations of any appellation, instead preferring to compose his wines as he chooses. Since then, Ferran has farmed his vineyards completely organically and uses no additives during the winemaking process, nor does he do any fining or filtering. In order to take advantage of all of the parts of the grape, he allows all of his wines time in contact with the skins. This “Orange Censurat,” made entirely of destemmed carignan blanc, sees a full thirty days of skin-contact maceration. It then ages for five months in 160-liter amphorae before bottling without any addition of sulfur. Ample texture and structured tannins frame flavors of dried fruit, licorice, and spice. Organically grown, low-intervention/natural wine, vegan.
