Il Mallo is a small producer of Nocino (traditional Italian walnut liqueur) in Emilia Romagna, the traditional home of the liqueur. Il Mallo is now in the third generation of family ownership, passed from mother to daughter, and are respected producers in the region. Nocino is made by steeping the green husk of fresh walnuts in neutral grain alcohol for 11 months, which quickly oxidizes to a deep brown color. The walnuts are then pressed in a wooden basket press and aged in stainless steel for 18 months. Sugar and spices are added a month before bottling. Primary botanicals for this Nocino include Junglas Regia walnuts, cinnamon, clove, and coriander seed. In the glass this packs a warming walnut wallop- think spicy walnut brownie! Toasty nutty notes are at the forefront, of course, but sweet milk chocolate, clove, and cinnamon provide plenty of depth and intrigue. Sip neat after dinner or enjoy in a cold weather variation on a Manhattan.
