Trabanco’s cider house is located in the town of Gijón, and contains an impressive collection of square wooden presses and old chestnut barrels dating back to the early 1900s. The family still makes their cider according to traditional methods, assisted by modern technology where appropriate. ‘Alma’ is a unique aperitif produced by blending the estate’s en rama cider with white wine and an array of botanicals (cinchona, wormwood, savory, gentian, artemisia, boldo, cinnamon, star anise, coriander, thyme, and vanilla) steeped in grape alcohol. Bright and refreshing at 15% abv, it features notes of lemon and orange peel alongside crushed green herbs, hints of baking spice and cracked pepper, and a cool, minty, woodsy streak.
