This Omachi 180ml cup is made with omachi rice and marigold yeast, using the yamahai brewing method, which prolongs fermentation and encourages the development of funkier, savory, and lactic flavors. In this case, we get a medium-bodied sake with floral and funk tones and a dry finish.
