Located in the mountains of València at an elevation of 923 meters is Baldovar 923 (get it?), a project established in 2016 by four founders inspired by the region’s outstanding potential given the quality of the soils, high altitude, and the existence of old vines of indigenous varietals. Their 14 hectares of low-yielding bush vines are between 20 to 80 years old and grow between 900 and 1,200 meters altitude. A winemaking coop had established a cellar well over a decade prior to the quartet restoring it to functionality. Their goal was simple; to craft wines of purity and authenticity that are true expressions of the unique terroir of a region flying under the radar. This pursuit of purity inspires an incredibly low amount of intervention in their winemaking process, with this translating into their achievement of a certification in organics, their adoption of biodynamic practices, and their choice to only ferment spontaneously, with no added fining agents, nutrients, or chemical agents. The grapes for this bottle of mencía hail from 40-year old vines planted at 980 meters on schistous soil in the Cerro Negro vineyard. Let’s get nerdy for a second: the grapes are 70% destemmed for semi-carbonic maceration and 30% whole cluster for cold carbonic maceration for 15-30 days depending on the vintage. Spontaneous fermentation with the skins goes on for a half lunar cycle where grapes are foot-stomped daily for gentle extraction. The wine is later aged for 10 months total with 70% being aged in tinajas and 30% in stainless steel tanks before being blended. Only 300 cases produced, get it while you can!
