Chris Brockway built Broc Cellars on a philosophy of sourcing sustainable and organic fruit in order to create exceptional wines. He takes a hands-off approach, allowing nature to be in charge, using only organic growing practices and indigenous yeasts to ferment his wines, never adding or taking anything away. Broc produced this “Clairet,” in collaboration with Selection Massale, from grapes grown in Solano County (southeast of Napa). This vintage is 100% cabernet sauvignon from the famed Wirth Ranch vineyards. A small amount (10%) of the grapes are kept whole cluster, enough to line the bottom of the tank; the rest are destemmed. The whole ferments with indigenous yeasts and no sulfur. Picked early and pressed early, this is California cabernet with uncommon freshness and delightfully mild tannins. Earthy aromas and stewed red fruit give way to peppery spice on the finish. It really is a kind of perfect red. Organically grown, low-intervention/natural wine, vegan.
