Salty and nutty like a sherry, this flor-aged wine actually comes from the Sierra Morena, in Andalucía north of Jerez. A sherry of this younger, fresher style would be called fino; where this wine is made they call it palido (pale). With organically grown fruit sourced from vineyards on the Gomez Nevado estate, it aged for three years in a solera and—unlike sherry—was not fortified. Hazelnut and subtle crisp apple sit lightly on the palate, for a delightful accompaniment to tapas on the terrace. Certified organic.
