Antica Erboristeria Cappelletti, or Cappelletti for short, was established in 1909 and achieved great fame for producing several different Amari and aperitivi. All of their production is done in-house by the fourth generation of the family, Luigi and Maddalena Cappelletti. They are located in Aldeno, 20km south of Trento in northern Italy, and all of their products focus on traditional roots, herbs, and flowers. This recipe from Giuseppe Cappelletti dates back to the 20th century and was among the Erboristeria’s (master of botanicals) first amari. The Pasubio offers a true taste of the Dolomite Mountains in the Trentino Region. It has notes of blueberries, pine, smoke, and bitter alpine herbs on a base of rich aged wine. It is traditionally enjoyed neat, at cellar temperature or slightly chilled, but can also pair well in mixed drinks with bourbon, rye, or brandy.
