Azienda Agricola Ciucci, based in Rome, produces olive oil as well as wine from the Lazio region. Going beyond eschewing chemical sprays, they seek to enhance the fertility of the soil and the nutritional value of their products by tilling grass and other plant material back into the ground. This vermentino was harvested by hand and macerated on the skins for a brief ten hours before fermenting in stainless steel tanks. Supremely well balanced and structural, it manages a richness on the palate while remaining light in feel. Apple and pear, with apple skin and a hint of nuttiness, are cut with lively citrus.
