Sébastien and Dimitri Arsac farm 14 hectares biodynamically on the volcanic hillsides of the Ardèche, inland from the right bank of the Rhône. Their hand-harvested grapes ferment with indigenous yeasts in cement tanks, and the resulting wines are bottled without fining and with a minimal amount of sulfur. Their ‘Chaumette’ rosé combines grenache (75%) and syrah (20%) with a smidge of viognier (5%) for aromatic lift. It ages in concrete eggs, where extended lees contact adds layers of texture to the finished wine. Creamy strawberry sits very pleasantly on the palate, before a subtle, cleansing citrus finish. Organically grown, biodynamically grown, low-intervention/natural wine, vegan.
