Driven by a yearning to return to the countryside, Philippe Bordes retired from his career as a professional plumber, and alongside his wife, Emma, made the leap to winemaking. Both were decades-long advocates of organically grown foods, so organic viticulture was the logical next step. With no formal training, the couple studied books, shadowed fellow producers, and learned the rest courtesy of the school of hard knocks! Their 9 ha estate is located in the heart of the Saint-Chinian AOP, and they debuted their first vintage in 2001, practicing biodynamic viticulture from the very start. They achieved organic certification in 2008, one of only 15 organic producers in Saint-Chinian. Their vineyards are bursting with biodiversity, and fertilized with homemade compost and plowed by horse. Yields are carefully controlled to encourage the vines to develop immunity to natural pests. Cellar operations proceed in accordance with the lunar calendar without temperature control, and fermentation occurs spontaneously without additives or intervention. Only a minimal amount of sulfur may be added at bottling to ensure the stability of the finished wines. ‘Les Narys’ is a blend of grenache, syrah, carignan, and mourvèdre, from 6 organically farmed plots. Each variety is de-stemmed and vinified separately in stainless steel tanks, with 4-7 weeks of maceration. After blending, bottling is done with light filtration and no fining. The ‘garrigue’ that grows throughout the Bordes’ vibrant vineyards is deliciously present on the nose and palate, accompanied by luscious bursts of dark plums, currants, Morello cherries, and brambly wildberries. Add in grippy, integrated tannins, herbs galore, and a gravelly mineral core and you’ve got a winner, winner, with every dinner!
