Domaine Pastou is situated in the small commune of Sury-en-Vaux, a sleepy town in the rolling hills of the northern part of the Sancerre appellation. Jean-Marc Pastou has been making wine since the early 1980s, when he planted his first vines, still in production today. The grapes are sustainably grown in soils that are a mix of sand, “caillottes” (small chalky stones) and flint; they are hand-harvested and fermented with indigenous yeast in stainless steel tanks. The wine is aged in tank on fine lees and bottled unfined and unfiltered. This Sancerre is a classic example of what one would expect from the region: super bright, crisp, and mineral-driven with fresh citrus flavors, more citrus and flowers on the nose, and a touch of lees on the finish.
