Envínate (literally translated: “wine yourself”) sources characteristic grape varieties from unique vineyards, primarily in the Ribeira Sacra region of Galicia and in the Canary Islands. A project of four friends who met at enology school, Envínate makes undeniably expressive wines with a decidedly Atlantic character. Palo Blanco is the name of the village, 600 meters up on the island of Tenerife, where the listán blanco for this cuvée is grown. Harvested by hand, it is pressed whole-cluster into a concrete tank for fermentation. The wine then ages in two Friulian 2500L oval foudres for 10 months before bottling without fining or filtration. Complex and intriguing but still approachable, it commands attention with the salty richness of lobster, with hazelnut lemon butter on the palate, finishing with tangy apple. Organically grown, low-intervention/natural wine.
