Young, innovative winemaker Tiago Sampaio, inspired by his grandfather’s vineyard work, earned his PhD in Viticulture and Enology from Oregon State University. Returning home to the Douro, he founded Folias de Baco in 2007. The winery is in the Alto Douro, in the sub-region of Cima-Corgo, a high-altitude, challenging terroir. This bright, zesty pèt-nat is 100% pinot noir, from two hectares of 18 year old vines grown organically on granitic soils. Grapes are hand harvested and pressed whole cluster into temperature-controlled stainless steel vats, where spontaneous fermentation with ambient yeasts occurs. No dosage, no fining, and no filtration: just delicious refreshment in a bottle! Ethereal hints of cherry, strawberry, and rose petal merge with lively acidity and delicate bubbles, all underpinned by subtle mineral notes. The combination embodies casual elegance and pairs easily with any occasion. Organically grown, low-intervention/natural wine, vegan.
