Greenhook Ginsmiths is a craft gin distillery in Brooklyn, started in 2010 by brothers Steven and Philip DeAngelo. They use a very innovative and unorthodox method of distilling: they have a custom built copper pot still specifically engineered to work under a vacuum, which removes air pressure from the still, allowing them to distill at temperatures drastically lower than ordinary stills, preventing the delicate aromas of the botanicals from being cooked by excessive heat. This makes a “lively and aromatic spirit that perfectly balances juniper with equal notes of herbal, floral, and citrus”. The dominant element is the clean juniper, but other botanicals including cinnamon, chamomile, coriander seeds, elderberries, elderflower, galangal root, orrisroot, and lemon and sweet orange peel, add wonderful aromatic complexity on top of a very full, smooth frame. They’ve canned up a classic G&T using their American Dry gin with tonic, enjoy chilled from the can on picnics or at the beach, or pour into a glass over ice!
