Like a tragic tale of exiled royalty, Domaine Goisot should be listed among the fine estates of Chablis - but this was sadly not to be, as the Saint Bris region was banished from the Chablis appellation after phylloxera ravaged the area in the late 1800s. Saint Bris shares the same climate and same base of Kimmeridgian limestone as its neighbor only a few kilometers to the east, but is now relegated to Bourgogne status. However, released from the strict rules of the Chablis appellation, the vignerons of Saint Bris are free to grow aligoté and sauvignon blanc in addition to chardonnay, and to say the Goisot family took advantage of this silver lining is a drastic understatement, to say the least! Jean-Hughes Goisot was among the vanguard of Burgundian biodynamic viticulture, and his son, Guillaume, upholds the family’s meticulous standards. This aligoté is hand harvested from 6.3 ha of vines located on high, cool-climate slopes of dense chalky soil, and is fermented with indigenous yeasts in temperature controlled stainless steel vats. It is aged on fine lees, also in stainless steel. Elegant, refreshing, and absolutely loaded with mineral-driven texture, this cuvée offers delicate layers of lemon blossom, yellow apple, quince, lemon curd, and spice, accompanied by fantastic precision and cut. The value here is incredible: Chablis fans (and anyone who loves crisp whites) won’t want to miss this! Certified organic, certified biodynamic.
