FROM IMPORTER: Carolina Alvarado and Arturo Herrera are Herrera Alvarado: a bodega with a mission to preserve the traditional viticultural practices of the Marga Marga valley. ‘Cuero de Vaca’ is 100% carmenere from vines grown on clay near the bodega at 320m elevation. The vines are farmed organically. The grapes are harvested by hand and fermented whole
cluster in cow skins without temperature control, with skin maceration lasting throughout alcoholic fermentation (about 2 weeks). They then rack the wine into old barrels to age for 15 months on fine lees, and bottle without fining, filtering or added S02.
