We are proud members of the Julie Hoch fanclub. And one sip of this effervescent elderflower-infused grüner veltliner will certainly have you asking us for a sign up list and merch drop date. Already a darling in the biodynamic winemaking community, this is Julie’s personal project independent from the wines she crafts with husband Christoph Hoch. Utilizing wild elderflower bushes that grow throughout their vineyards in Kremstal, she harvests the petals by hand in the spring and summer and dries them slowly to retain all the delicate essential oils before making a tea with the pure petals of the flowers. She then blends the tea with the fresh grüner grape must (roughly 70% grape must to 30% botanical tea) and captures the spontaneous fermentation in bottle. A complex process yields a beautifully approachable bottle imbued with the essence and whimsy of Julie and her flowers. Bone-dry and fresh, with all the markers of grüner crowned with a garland of elderflower. Biodynamically grown, organically grown, sustainably grown, low-intervention/natural wine.
