Stefan Wellanschitz comes from a winemaking family in the eastern part of Austria, though he has consciously gone in his own direction. The name of his winery—Kolfok—roughly translates to “independent thinker,” or, perhaps, “wild one.” He certainly uses a unique technique in making this wine: Rather than leave the grüner veltliner and welschriesling juice for this blend as is or choose to keep the varieties in contact with the grape skins—which would result in an orange wine—he uses "intracellular fermentation" (it could also be called carbonic maceration of white grapes) to tread the stylistic line between the two categories. Its expansive palate is intensely mineral and refreshing, offering a clean-cut rush of white peach, sea salt and lemon Starburst. Organically grown, low-intervention/natural wine, vegan.
