A group project where everyone takes ownership of their role, encouraging and inspiring each other in tandem? Welcome to Les Equilibristes. Started in 2015 by Francois de Monval and Florent Girou, (a restaurateur and wine wholesaler; and winemaker and vineyard manager, respectively), this collective is guided by the principle of accessibility - focusing on carving pathways that amplify honest wines crafted and enriched by the warmth of human collaboration. Their manifesto? Vines cultivated using organic farming practices, a commitment to biodynamics, native yeast ferments, neutral and porous vessels for aging. In short, it’s an ethos steeped in the desire to produce wines with grapes that are wholesome and authentic expressions of their terroir and the human hands that steward it. This ‘Borboyon’ is composed of 95% jacquère hailing from 60 year old vines and is rounded out with 5% of altesse. The altesse as well as half of the jacquère is direct pressed, while the other half of the jacquère goes through a 12-day maceration period, all fermenting spontaneously. Aged on the lees for 6 months, expect a lush and energetic texture on the palate, like rushing glacial water. Underripe pear, quince, and bergamot are edged out by a flinty finish. Organically grown, biodynamically grown, low-intervention/natural wine.
